Healthy Couscous Salad

10 oz. Box of Couscous, prepared according to package
1/4 Cup Olive Oil
1 tsp. Ground Cumin
Pinch of Cayenne Pepper
1/4 Cup of dried Cranberries
1/2 Cup of Chopped Carrot
1/2 Cup of Chopped Green Olives
2 Bunches of Green Onions, Sliced
1 Large Garlic Clove
1 Cucumber, Chopped
3 Tomatoes, Chopped
Cashew (optional)
Mix together and chill.
