4 boneless, skinless chicken breasts
Salt and fresh pepper to taste
2 Tbs Basil Pesto
1 medium tomato, sliced
1 (8 oz) mozzarella ball sliced into thick pieces
2 tsp grated Parmesan cheese
Preheat the oven to 400° F. Line baking sheet with foil or parch¬ment for easy clean-up. Lay the chicken breast on plastic wrap (top and bottom) and with meat tenderizer, pound to about .”thick. Season chicken breasts lightly with salt and fresh pepper. Place the chicken on prepared baking sheet. Spread . tbs of basil pesto over each piece of chicken. Bake for 15 to 20 minutes or until chicken is no longer pink in center. Remove from oven; top with sliced mozzarella first, then tomatoes, and sprinkle with Parmesan cheese. Bake for an additional 3 to 5 minutes or until cheese is melted.
