The sequel to their first book Run Fast. Eat Slow., authors Shalane and Elyse have created a new cookbook with fast and easy recipes for those on the go, not just athletes. This cookbook was published in August 2018 and I have had a chance to try many of their recipes. I am a runner, but all their recipes can be enjoyed by anyone that likes tasty food.
In this cookbook, most recipes take only a short time to make. Prep time and ingredients are simplified to make the whole cooking experience more enjoyable. Sometimes healthy recipe cookbooks have weird or expensive ingredients, but most of the recipes have easy to find ingredients or substitutions with items you already have in your pantry. I am not someone who will spend more than necessary on special ingredients, so it was relieving knowing that I did not have to make sacrifices to enjoy these recipes.
My favorite recipes in the cookbook are the “Bison Chili” and the “Chocolate Peanut Butter Cups.” The chili recipe has optional beans, ground beef or bison, peppers, onion, and tomatoes to bulk up the recipe. You can cook this meal in the slow cooker or on the stovetop, and it smells AMAZING! It was quite difficult to wait for the chili to be cooked because it smelled so good. I never liked chili, but after finding this recipe it is now one of my favorite meals.
The homemade peanut butter cups are also wonderful to make. They are super simple and slightly bitter, but freeze well. I froze most of the batch I made and take a few out at a time to enjoy. This is a great substitution if you are looking for a healthier peanut butter cup to enjoy.
